Some Like It Hot!!!
Peri Peri Sausages With Crushed Potato!
Serves 3-4 People
Ahh now this is a fun easy recipe. I admit the picture doesn't do it much justice but believe you me the taste of this dish is superb!
Things You'll Need
- Pack of 8 Sausages
- 1 Tbsp Olive Oil
- 3 Tbsp Sweet Chilli Sauce
- 1 Sprig of Thyme
- Salt and Pepper
- 500g New Potatoes (or Salad Potatoes)
- 1 Large Red Chilli
- 1/2 Lemon cut into quarters
- 4 Cloves of Garlic
- OPTIONAL 6 Small Tomato's (Vine works best!)
Honestly like I said this is one seriously easy recipe!! Doesn't take too long to get ready either!!
- Turn the oven to about 180° C (160° C Fan Assisted)
- Place your sausages in an oven-proof dish.
- In a small bowl add the olive oil and sweet chilli sauce as well as the thyme, salt + pepper and garlic cloves and mix well.
- Once mixed cover the sausages and get your hands in there and make sure each is coated well.
- De-seed your chilli and chop into fairly large chunks and scatter over the sausages as well as squeezing the lemon juice over them then pop them into the dish as well.
- Pop it into the oven and let it roast for around 45-50 mins.
- Whilst waiting for the sausages, pop your potatoes into a pan of boiling water with a pinch of salt and pepper and boil until they fall easily from a fork.
- Once the potatoes are done, drain well and add a good knob of butter and crush (not so it's smooth, so lumps and bumps are acceptable!).
- OPTIONAL 5 mins before the sausages are ready pop your vined tomato's into the dish and let them start to shrivel slightly.
- Check the sausages in the normal way you would (thermometer or break one open).
- Take a good dollop of your crushed potatoes and arrange on the plate however you wish ( I went for just popping it onto the side) and place your sausages onto the plate as well, giving them a good coating of any remaining sauce and add on your tomato's if you used them.
- Enjoy!!
See I told you it was rather easy didn't I? The magic of this recipe it can be tweaked so if you're not a fan of sausage, you can use a couple of chicken breasts or if you like it a bit hotter use more sweet chilli sauce or even another couple of chilli's!
